Eggo Sundae inspired by Stranger Things

Today we're making a totally customizable Eggo Sundae. This bowlful of happiness is inspired by Eleven's favorite breakfast: Triple Decker Eggo Extravaganza. We're using mini Eggos and topping this sundae with all sorts of sweet treats for this couch-worthy snack. The great thing about it? It’s only 8,000 calories!

Mini Eggo Waffles

Eggo waffles are a must for this dessert, and I wanted to mix things up rather than replicating the full dish from Stranger Things. I decided to use mini waffles and they worked so well! It’s been years since I’ve had Eggos, so this week has been full of nostalgia.

Scoops Ahoy

For those unfamiliar or maybe you just weren’t paying attention, Scoops Ahoy is the name of the ice cream shop in the mall that Steve and Robin work at and the kids frequent. They actually have a sundae that includes Eggo waffles cut and held up with wooden skewers to look like sails. That’d be really fun to recreate if you can’t find the mini waffles!

For the branded cups, I downloaded a free printable from Brite & Bubbly. The ice cream cups I bought from Target (they have them in their seasonal summer section), but I know I’ve also seen them at Dollar Tree. In case your cups are a little taller than the printable, like mine, I recommend not trimming the bottoms of the print-outs until you’ve sized them on the cups you’ll be using. I unfortunately did not do that, against my inner voice, and had to use some scrap paper to cover some of the cup before adding the print-out.

They look adorable and are perfect for this recipe!

Ice Cream Sundae

The ice cream you choose is completely up to you. I chose cookies and cream because it’s a classic, but it also fits the slightly spooky grungy vibe I’m going for with this recipe. The toppings you choose are also up to you. In the show, Hopper and Elle top theirs with whipped cream, chocolate chips, Reese’s Pieces, and jelly beans. I decided to go with whipped cream, chocolate chips, M&Ms, blueberries, blackberries, some candied nuts, and, of course, Mini Eggo Waffles.

Scoops Ahoy Eggo Sundae

A sundae inspired by Stranger Things Triple Decker Eggo Extravaganza

Ingredients

2-3 scoops of your favorite ice cream

4 Mini Eggo Waffles (1 full piece has 4 individual waffles)

5 chocolate chips

10 M&Ms

5 blueberries

5 blackberries

1 Tbsp candied nuts

¼ cup whipped cream

Method

Toast Eggo Waffles according to package directions.

Add ice cream to your bowl. Top with whipped cream.

Break Eggo Waffles into individual mini waffles and tuck aesthetically into your sundae. Add remaining toppings.
