KK’s Lazy Day Quesadilla
Some recipes are carefully planned. Others happen because you need food, but your brain has already moved on to seventeen other things.
This is one of those recipes.
My friend KK shared this quesadilla with me as her ADHD-approved meal for those days when cooking feels like too much. It’s quick, easy, endlessly customizable, and made with ingredients you probably already have.
The original version is exactly what a lazy day recipe should be: tortillas, cheese, a little chili powder, and a microwave. KK makes basically a double-decker quesadilla, microwaves it until the cheese is melted, then folds it in half so it’s smaller, faster to eat, and gives her twice the food per bite. Mom life means she needs something that actually fuels her too, which is why she sometimes packs her lazy day meals with extra nutrients. If she has the extra energy and wants a little crunch, she’ll crisp it up afterward.
Since I don’t have a microwave, I make mine entirely in a skillet. Cooking it low and slow with a lid lets the cheese melt without burning the tortilla, giving you that crispy quesadilla texture from the start.
The real beauty of this recipe is that it’s also the perfect leftover rescue mission. Taco night leftovers? Add them. Beans that need to be used up? Throw them in. It’s less about following a strict recipe and more about having an easy meal that works with whatever you already have.
KK’s Taco Night Leftover Version
This is KK’s favorite way to turn the basic quesadilla into a full meal:
Spread refried beans and cheese completely over the first tortilla, then add black beans to only half. Add the second tortilla, spread cheese over it, and add taco meat to the opposite half. Finish with a little extra cheese on top to act as “glue” before heating.
The cheese glue technique is honestly the secret. It helps everything stick together while you heat it up, especially when you’re packing in leftovers and trying to make a lazy day meal do a little more work.
What to Serve it With
My favorite easy but flavorful way to serve this is with my Greek Yogurt Chipotle Sauce (recipe coming soon!). You can also serve it with salsa or your favorite hot sauce. The key is keeping it easy!
KK’s Lazy Day Quesadilla
Ingredients
2 flour tortillas
Shredded cheese
Chili powder (optional)
Skillet Instructions
Heat a skillet over low heat.
Place one tortilla in the skillet and sprinkle with cheese.
Add a light dusting of chili powder, if using.
Top with the second tortilla and sprinkle with more cheese.
Cover with a lid and cook until the cheese begins to melt.
Once the quesadilla is cooked through and the cheese is melted, fold it in half, cut it into wedges, and serve.
Microwave Instructions
Assemble the quesadilla on a microwave-safe plate and microwave for about 1½ minutes, or until the cheese is melted.
Once it’s heated through, fold it in half, cut it into wedges, and serve.
For extra crunch, crisp the quesadilla before cutting in a skillet, toaster oven, or air fryer.
